The dish is prepared without unnecessary complications. The story of how the Jerusalem artichoke purée recipe ended up in my culinary repertoire is quite curious. During one of my business trips, after a hard day's work, we were taken to a nice French restaurant for dinner. With one meat dish—can't even remember which—they served a very original side. At first I thought it was made from the familiar potato, but the taste was significantly different. I couldn't resist and asked the waiter what we'd been served. It turned out to be Jerusalem artichoke purée. Back then, I didn't even know what that was, but I really liked the taste—can't even say what to compare it to... Honestly, it's easier to try it yourself to understand. So, when I returned home, I went to the market, bought some Jerusalem artichokes, got a recipe, and prepared the purée, slightly adapting it to my own taste (added more spicy spices—I love it hot). The result was an excellent Jerusalem artichoke purée, which pleased not only me but everyone in my family. Now we occasionally prepare and happily enjoy it for variety.     First, the Jerusalem artichoke needs to be peeled (like a potato). Peel thoroughly, as the skin is very bitter.

    Place the Jerusalem artichoke in water and boil for 20 minutes (until tender).

    Now you need to turn the boiled Jerusalem artichoke into a puree. You can use a regular potato masher for this. While mashing, add a little cream or sour cream to the puree to enhance the flavor.
