Tomato puree

Description

Universal dressing for salads and hot dishes. To replace store-bought tomato paste, it's better to prepare tomato puree at home. The process takes no more than two hours, and the taste quality is excellent. You can—and even should—use overripe tomatoes, as their flesh will be thicker and juicier. This puree is perfect served with pasta, meat, and vegetables.

    1. It's best to use ripe and juicy tomatoes, even slightly overripe ones. Wash them thoroughly, cut in half, and place in a large container over heat.

    2. Cover with a lid and cook until they become soft. Add salt and stir constantly.

    3. Place the pot back on the heat, secure a colander or sieve on top, and pour the tomatoes into it. Carefully press through the sieve until completely strained. Bring the resulting mass to a boil.

    4. Cook the tomatoes for another 35 minutes over very low heat. Don't forget to stir.

    5. Once ready, pour the tomato puree made at home into sterilized jars, seal them, and cover with a warm blanket.

    6. After completely cooling, store the jars in a cellar or pantry. The puree can now be used for any culinary purposes and can even be consumed as juice.
