
Pita with fava bean cutlets

1. Mix the lamb peas, flour, parsley, and spices in a food processor until a homogeneous consistency is achieved. You can also mash the lamb peas in a bowl using a fork or a potato masher, then mix with the spices.

2. From the resulting mixture, form small cutlets about 3.5–5 cm long and 2.5 cm thick. Preheat the oven to 200 °C and place the cutlets on a lightly oiled baking sheet. Put them in the oven and bake for 15–20 minutes.

3. While the cutlets are cooking, mix the tahini and lemon juice, set aside. Dice the tomatoes, crumble the feta cheese and set aside.

4. When the cutlets are ready, place them on lavash with a generous amount of prepared filling.
