Description

Pishme are the most delicious when fresh, so prepare them in small quantities. However, if you have a large group, you'll need to make more—keep in mind they get eaten up quickly. Actually, they fry very fast—literally in a matter of seconds. The only important thing is to let the dough rest thoroughly; otherwise, you'll end up with rhombus-shaped flatbreads instead of crispy pishme.

    Prepare all the necessary ingredients.

    Dissolve the yeast and a little sugar in warm milk, and leave for 15 minutes to allow the yeast to activate.

    Then add the remaining sugar, a pinch of salt, the yolk, and sift in the flour.

    Knead a soft dough that does not stick to your hands. Let the dough rest in a warm place for 2 hours. I left my dough near a heated stove burner.

    Heat the vegetable oil well in a frying pan. Add the diamond-shaped pieces and fry on both sides until golden brown. Note: they cook very quickly, literally within a minute, so don't step away from the pan, otherwise they will burn.
