
Pishmanie
Description
The recipe won't take much time. Pishmanie is a delicious dessert made with a minimal number of ingredients. If you have experience preparing and working with caramel, this recipe won't cause any difficulties. Instead of lemon juice, you can use citric acid. Serve chilled.

Prepare all the necessary ingredients for making the Turkish dessert "pishmaniye."

Place the butter in a skillet, melt it, and bring to a boil over medium heat. Gradually add the sifted flour to the skillet, stirring constantly.

Reduce the heat and continue frying, stirring, until the flour begins to crumble and no longer smells of raw flour. Remove and let cool.

While the flour is cooling, prepare the caramel. To do this, pour water into a heavy-bottomed saucepan and add the sugar. Place over medium heat.

Bring to a boil, add lemon juice. Simmer over low heat until it reaches the soft-ball stage, which is when the syrup can be stretched like chewing gum in cold water.

Take a metal tray, preferably with a non-stick coating, and grease it with vegetable oil. Pour the hot caramel onto it. Stir with a spatula while the caramel is still hot, then knead and stretch the caramel, folding it repeatedly.

Sift the flour through a sieve and spread it on the table. Stretch the caramel into a ring and sprinkle with flour.

Stretch the caramel, dusting it with flour, and fold it back into a ring. Repeat the stretching and flour-dusting process until thin threads of caramel mixed with flour are formed. The caramel should fully absorb all the flour.

Then crumble the pişmaniye strands into small pieces, so that it resembles cotton candy. Form small balls from the resulting mixture.

Place the pieces of pishmamie on a plate, sprinkle with chopped pistachios, and serve with hot tea.
