
Crackeline pastries
Description
Delicious baked treats for the whole family. Craquelin dough consists of just three ingredients: flour, sugar, and butter. Thanks to this dough, the delicate, airy pastries have a delicious crispy crust. It's impossible to resist such pastries. Be sure to try them! Serve warm or chilled. Perfect with tea.

For crackling dough, mix flour, sugar, and butter by hand.

For the choux pastry, heat the milk with the butter. Bring to a boil until the butter has melted.

Add all the flour and quickly mix the dough with a spatula. At this stage, the flour is scalded. Warm the dough in the saucepan over low heat for a few more minutes, stirring constantly. This is necessary to ensure that all the flour is thoroughly scalded. Then let the dough cool down to a warm state.

Then add the eggs to the dough one at a time.

Place small portions of choux pastry onto a baking sheet. Keep in mind that they will increase in size during baking. Place small rounds of craquelin dough on top of each portion. Bake in the oven at 190°C for 15–20 minutes, until golden brown.

After baking, let the pastries cool completely.

For the cream, whip the cream with powdered sugar. Fill the bottom of the pastries with the cream. Let them steep for at least an hour so they absorb some moisture from the inside.
