
Lime Pastries
Description
Homemade treats for tea. A recipe for pastries filled with lime zest, lime juice, and condensed milk, topped with whipped cream. Instead of small pastries, you can make one large pie. Serve with tea or coffee.

1. Prepare the filling. Beat egg yolks and lime zest in a bowl for 1 minute.

2. Add condensed milk together with lime juice and whisk. Set aside until the filling thickens, for about 30 minutes.

3. Make the pastry. Preheat the oven to 160 degrees. Lightly spray tart molds (or one large pie pan) with cooking spray. Crush the crackers by hand or in a food processor until they resemble coarse sand. Add sugar and mix in the processor. Add butter and mix until the mixture resembles wet sand.

4. Transfer the prepared mixture into a tart pan, pressing it onto the surface. Bake in the oven until golden brown, approximately 10-12 minutes (15-18 minutes for a pie). Let cool completely.

5. Place 1 tablespoon of filling on top of each tart or spread the filling over the entire pie. Return to the oven and bake for approximately 10 minutes (15-18 minutes for the pie). Let cool completely.

6. In a large bowl, use a mixer to whip the cream on high speed until thickened. Reduce speed to low and add powdered sugar, then increase speed to high and whip again. Chill the whipped cream and use it to decorate pastries or cake just before serving. If desired, garnish with sugar-dusted lime slices.
