Description

Delicious pastry for the whole family. The specified amount of ingredients yields 12–16 pastries (depending on their size). You can optionally replace the orange zest in the buttery biscuit with vanilla or omit it altogether. Serve warm or chilled. Perfect with tea.

Instructions

  1. 1

    Step 1

    Step 1

Prepare all the necessary ingredients for making the pastries. Lightly dry the peanuts in advance in a pan or oven, then remove the skins. Make sure the butter is at room temperature.

  2. 2

    Step 2

    Step 2

Beat the softened butter (120 g) with sugar (75 g) into a fluffy cream, then add the eggs (one at a time), continuing to beat.

  3. 3

    Step 3

    Step 3

Add the orange zest (grated from the fruit using a fine grater), then add the flour, sifted and mixed with baking powder.

  4. 4

    Step 4

    Step 4

Bring the mixture to a smooth consistency, gradually adding milk (40 ml).

  5. 5

The finished Lamingtons pastry dough should be soft and drop easily from a spoon.

  6. 6

Place the dough in a prepared rectangular or square pan and bake in a preheated oven at 180 degrees for 25–30 minutes.

  7. 7

While the butter cake is baking, prepare the chocolate glaze. To do this, combine butter (50 g) and milk (100 ml) in a saucepan. Heat the mixture until the butter melts, but do not bring it to a boil.

  8. 8

    Step 8

    Step 8

Separately mix the cocoa powder and granulated sugar (50 g). Remove the butter-milk mixture from the heat, add the dry ingredients, and stir thoroughly until smooth.

  9. 9

    Step 9

    Step 9

Return the saucepan with the glaze to the heat, bring the contents to a boil while continuing to stir with a spoon. Let the finished chocolate glaze cool, stirring it occasionally to prevent separation.

Remove the ready butter cake from the oven and let it cool.
