Description
Delicious baked treats for the whole family. Delicate sponge cake squares dipped in chocolate glaze and rolled in coconut flakes—these are Lamingtons. They are made in various ways across different Australian regions, and there are many sponge cake recipes. You can layer the sponge with thick jam or whipped cream. I will tell you my version. Serve warm or chilled. Perfect with tea.

Prepare the ingredients for the sponge cake. Carefully weigh the flour, sugar, and starch. The original recipe doesn't include vanilla sugar, but I prefer the sponge cake to smell of vanilla rather than eggs :)

Sift together flour, starch, and baking powder.

Beat the eggs until frothy.

Add sugar and continue whisking until the sugar dissolves. The mixture will become fluffy and thick.

Melt the butter (20 grams) and add boiling water to it. Stir.

And pour it in a thin stream into the eggs beaten with sugar. Do not stop beating!

Now add the flour with starch and gently mix.

It's better to use a rectangular or square baking pan. I have a 24 by 35 cm pan. Line the pan with parchment paper, pour in the batter and smooth it out.

Bake in a preheated oven at 180 degrees for 25-30 minutes. Check for doneness with a wooden skewer. Let the baked sponge cake sit in the oven with the door open for about 7-8 minutes, then remove it.

Let the sponge cake cool and rest for a couple of hours, then cut it into pieces.

Pour milk into a deep container, add butter, powdered sugar, and chocolate. Melt over a water bath, stirring constantly.

The pastries are traditionally coated with coconut flakes, but not everyone in my family likes them. So I crushed some nuts instead.

Dip a piece of sponge cake into the resulting glaze.

And coat it on all sides with coconut flakes.
