
Airy meringue pastry
Description
The recipe won't take much time. This is a classic recipe for making light meringue cookies. The dessert is made with just three ingredients: sugar, egg whites, and vanilla sugar. They are whisked until thick, then spooned onto a baking sheet and baked in the oven. Bake at the lowest temperature—around 70–80 degrees. Good luck! Serve chilled.

Separate the egg whites and chill them in the refrigerator for 40 minutes.

Beat the egg whites until fluffy foam forms.

Gradually add sugar and continue whisking until thickened.

At the very end, add vanilla sugar.

Transfer the mixture into a pastry bag and pipe onto a baking sheet (lined with parchment paper), leaving space between each portion. Bake in the oven for 1 hour at the lowest temperature (up to 100°C).
