
Pastry with cream
Description
Homemade baked goods for tea. Sponge cake pastries with cream are quite easy to make. You need to bake one cake layer and prepare pastry cream. The rest is a matter of technique. As for the cream, it can be any kind you like. Such a pastry will make an excellent dessert for a family tea time and at a festive table with guests. It can be served with tea or coffee.

Prepare the ingredients for making a cream pastry.

Separate the egg whites from the yolks and beat until light and stiff peaks form.

Gradually add the sugar, beating the egg whites each time. You should get a dense, thick mixture.

Add the egg yolks and gently mix them with the egg whites and sugar.

Add the baking powder and gradually add the sifted flour.

Using a spatula, mix the dough ingredients.

Place the dough in a baking tin lined with parchment paper. My tin is 20 × 30 centimetres.

Bake the sponge cake at 170 degrees for 35–40 minutes. Check doneness with a dry wooden skewer.

Prepare pastry cream. In a small bowl, mix the egg yolks and sugar.

Pour in 2–3 tablespoons of cold milk and add the starch. Mix thoroughly. There must be no lumps.

Place the saucepan of milk on the stove and bring to a boil. Then, in a thin stream, pour in the mixture of egg yolks, sugar, and starch. Stirring constantly, bring the cream to a thick consistency. Add vanilla sugar. Then cool the cream.

Cut the cooled sponge cake layer into small rounds with any cookie cutter that has sharp edges.

Crush the cake layer trimmings into crumbs using a blender.

Spread each sponge cake layer generously with custard cream on top and around the sides.

Sprinkle the pastry with sponge cake crumbs.
