Description
The dish is prepared without unnecessary complications. Mocha pastries are quite simple to make, especially easy for those who know how to bake sponge cake dough. By the way, two very important kitchen tools are required for preparation—a square baking pan and a pastry bag. If you don't have a pastry bag, it's no problem. You can make one from a cellophane bag (by cutting off one corner). The finished dessert can be served at the table.

Melt 50 grams of butter with chocolate, then let it cool slightly. While the mixture is cooling, beat the eggs with sugar in a separate bowl using a mixer, then pour them into the cooled chocolate mixture and mix well. Next, add vanilla, salt, and sift in the flour. Mix thoroughly until smooth and lump-free.

Then pour the sponge cake batter into a greased baking pan and bake in the oven at 160 degrees. It is important not to over-dry the sponge cake; it should be soft, but not undercooked. Let the finished cake cool and cut it into equal pieces of any shape.

Then prepare the coffee cream. To do this, dissolve a spoonful of coffee in a small amount of milk.

Next, in another container, beat the butter with powdered sugar (it must be powdered sugar, as regular sugar will not dissolve in the butter), add the coffee mixture, and beat again. Chill the cream in the refrigerator.

Then spread the coffee cream on the sponge cakes, joining them in pairs. Transfer the remaining cream to a piping bag and decorate the pastries.
