Description
Delicious baked treats for the whole family. To keep the honey pastries from tasting cloyingly sweet, be sure to add lemon juice. It balances the sweetness of the cream and crumbs and gives the dessert a light tang. Serve the pastries chilled with aromatic coffee, tea, latte, or cappuccino. Serve cooled or slightly warm.

Prepare the listed ingredients. It is best to crumble the honey sponge layer or honey cookies into crumbs using a blender. For the topping you can use cocoa powder or shredded coconut, honey crumbs—whatever you prefer.

Leave the butter at room temperature until it softens. Then put it in the bowl of a stand mixer or food processor, add the powdered sugar, and beat for 2–3 minutes. Next add sour cream of any fat content and beat again. You can use condensed milk instead of sour cream, but then do not add the powdered sugar.

Pour the honey crumbs into a bowl or wide dish, add the cream to the same bowl. Pour in the lemon juice and mix everything thoroughly.

Place the sweet mixture in the refrigerator for half an hour; in that time it will swell, the butter will firm up again, and it will be easier for you to shape the potato candies.

Next, sprinkle cocoa powder or shredded coconut, honey crumbs—whatever you will roll the potato sweets in—onto a plate. Divide the chilled mixture into equal portions and roll them in your hands into balls or elongated logs. Coat them in the cocoa or crumbs on all sides.
