First, combine the butter, salt, water, and set it over heat.

Add the flour and stir quickly so that it cooks. After 30 seconds, remove from the heat.

Set the finished dough aside for 5–7 minutes to let it cool slightly.

During this time you can make the filling cream. Combine the cottage cheese and powdered sugar. The amount of powdered sugar depends on the cottage cheese and your taste preferences.

Whisk until fluffy. In some recipes, butter is added to the cream, but I didn't want to make it heavier.

Into the warm, but no longer hot dough, beat in the eggs one at a time. It is very important to knead the dough thoroughly before adding the next egg.
