Description

The recipe won't take much time. The recipe is quite simple, but it does require time. However, in the end you will surprise guests and loved ones with an original and very tasty pastry. The familiar eclairs in this version look completely different. The combination of choux and puff pastry with cream is simply unique. The pastry is ready. Serve at the table.

    Pour water into a pot and add 100 grams of oil. Place it on the stove.

    Add a pinch of salt. When the butter fully dissolves in the water, add the flour. Stir thoroughly until you obtain a homogeneous mixture that comes away easily from the sides of the pot.

    Cool the dough slightly and add the four eggs one by one, mixing well each time.

    The choux pastry should turn out like this. It should be not too thick, but not liquid either, smooth, glossy, and slightly sticky.

    Cut the puff pastry into squares with a side of 10 cm. Place them on a baking sheet. Spoon a tablespoon of choux pastry onto each square.

    Connect the edges of the squares in the middle, but do not secure them.

    Bake the cupcakes in an oven preheated to 185‑190 °C, for 40‑45 minutes. Do not open the oven for the first 30 minutes.

    Pour the milk into a saucepan and place it on the stove. In a bowl, whisk two eggs with sugar and corn starch. Thin it slightly with cold milk. Then pour it into the saucepan with the milk. Constantly stirring, bring the custard to a thickened consistency. After that, cool the custard and add soft butter to it.

    Using a pastry bag or a syringe, fill the pastries with cream.
