Mini cake with boiled condensed milk and nuts

Description

Sweet tooths will love these little pastry baskets. The dough is quite crumbly, condensed milk adds sweetness and tenderness, and nuts add texture. Use any nuts you like; lightly toasted nuts will give a richer flavour and aroma. Serve cooled or slightly warm.

    Prepare all the ingredients you need to make “Basket” pastries with boiled condensed milk and nuts. Chill the butter in the freezer beforehand.

    Put the flour, sugar, salt and vanilla sugar into a bowl. Mix everything well.

    Grate the butter into the flour mixture, then quickly rub everything into fine crumbs.

    Place the egg yolk and sour cream in a bowl.

    Knead the dough very quickly, put it in a bag, and refrigerate for 30 minutes.

    Divide the dough into equal portions and place one portion in each tartlet mould. Use your fingers to press the dough over the bottom and up the sides to a thickness of about 4–5 mm. Prick the dough on the bottom of the moulds with a fork. Lay baking paper on the dough and fill the tartlets with beans.

    Bake the “baskets” for 10 minutes, then remove the parchment and beans and bake the baskets for another 10–15 minutes; let cool.

    Mix the boiled condensed milk and put it into a piping bag fitted with a star tip. Pipe the condensed milk into each tartlet shell.

    Dry the nuts briefly in a dry skillet, chop them, and sprinkle on top of the condensed milk.
