Description
It goes wonderfully with tea and coffee. The “Chestnuts” pastry can be decorated in several ways: you can cover it with glaze and sprinkle crumbs on half of each piece, or, as in the version shown here, roll the whole piece in crumbs. That’s purely a matter of taste. For the coating you can use not only crushed cookies but also wafers. Pick what you like best and treat your family to this lovely dessert. Serve cooled or lightly warm.

Prepare the necessary ingredients.

In a bowl, combine egg yolks, sour cream, and soft margarine.

Rub the contents of the bowl thoroughly.

In a separate bowl, mix the flour and baking soda.

Add the flour mixture to the butter mixture. Mix. Knead the dough by hand.

The finished dough should be soft—not crumbly, not sticky on the hands—and very supple. Transfer it onto the work surface.

Divide the dough into 20 portions. Shape into balls.

Arrange the prepared pieces on a baking sheet lined with parchment paper. Bake in an oven preheated to 180°C for 10–15 minutes. Allow for variations in how your oven bakes.

Transfer the baked blanks to a serving dish and let cool.

Make the glaze. In a small saucepan, combine the sugar, milk, and cocoa.

Place over heat and simmer, stirring, until boiling. As soon as the sugar has dissolved, cook for another 2–3 minutes and remove from the heat. The glaze does not need to cool.

Decorate the pastry. Dip each piece in the glaze. Right away coat it with crushed cookies. You can coat the pastry halfway or all over.
