Description

Delicious baked goods for the whole family. If you do not want to fuss over making a sponge cake, use a store-bought one or make it ahead of time. Take the cream cheese and butter out of the refrigerator in advance so they are at room temperature; then the cream will whip well and will not split. Use only good-quality chocolate—it sets quickly on a sponge cake that is sufficiently cooled. It is best to melt the chocolate in a tall container into which you can easily lower the entire pastry. The bake is ready. Serve at the table.

    Prepare all the ingredients you need to make the “Eskimo” cake.

    Crack the egg into a bowl, add salt and sugar. Beat with a mixer on high speed until light and fluffy. The egg mixture should increase in volume by 2–3 times. This will take about 3 minutes.

    Combine the flour with the baking powder, sift into the egg mixture, and gently knead a light, smooth dough.

    Transfer the dough to a baking dish greased with vegetable oil. Bake in a hot oven at 180°C for 15–20 minutes. Remove from the oven and let stand for 5 minutes. Cool completely on a wire rack.

    Combine soft butter with powdered sugar and beat until light and fluffy. Add cream cheese and beat until smooth and airy.

    Crumble the sponge cake into crumbs and put them into the bowl with the cream. Mix well.

    Fill silicone popsicle molds with the sponge cake mixture and insert the sticks. Put the molds with the sponge cake mixture in the freezer for two hours. During that time the mixture will set and come out of the molds easily.

    Finely chop the dark and white chocolate and melt each separately in a double boiler. Dip each ice cream bar into the dark chocolate, let the excess chocolate drip off, and place on parchment paper. Let the chocolate set, then make a pattern on the surface with the white chocolate. If desired, decorate further with additional decorations. Refrigerate the pastries so the chocolate sets completely.
