Beat the egg yolks with sugar until foamy, then mix in the vanilla.

Add the sifted flour, mix until smooth, for 15 seconds.

Separately beat the egg whites into a stiff foam, then add lemon acid.

Add the egg whites to the yolk mixture. Gently mix.

Line a baking sheet with parchment paper, then place a silicone mat greased with oil on top. Using a piping bag, pipe the dough onto the baking sheet, forming circles with a diameter of about 5 cm. Bake the pancakes for 20 minutes at 190 degrees. Then let them cool.

We prepare the syrup. Pour sugar into water, bring to a boil and simmer under the lid for 5 minutes. Add condensed milk and boil again. Remove from heat, let cool, then place in the refrigerator.

Using a pastry bag, spread the prepared cream onto the cooled pancakes.
