Description
I present to you a fairly simple recipe for making "Bouche" pastries. Be prepared to put in a bit of effort to get everything just right. Properly made pastries will bring you great pleasure, not only because of their divine taste but also from a purely aesthetic standpoint.

Step 1

Prepare the dough. Separate the eggs into yolks and whites. Beat the yolks with sugar and vanilla until a stable foam forms. Add the flour and quickly mix until smooth.

Separately beat the egg whites until stiff peaks form, adding lemon acid at the end.

Add the beaten egg whites to the yolk-flour mixture and gently stir until smooth.

Line a baking sheet with a silicone mat or parchment paper. Transfer the dough into a piping bag and carefully squeeze out round patties (about 5 cm in diameter) onto the baking sheet. Bake in the oven for 20 minutes at 200°C. Let the baked patties cool.

Prepare the cream. Boil sugar in water, cook the syrup for 5 minutes. Then add condensed milk and bring to a boil again. Remove from heat, let cool in the refrigerator.

Cut the butter into cubes and beat until white.

Adding condensed milk syrup, beat the cream until smooth.

Transfer the cream into a piping bag. Spread it onto half of the cooled cakes.

Top with the second halves, gently pressing with your hand. Place the pastry in the refrigerator to allow the layers to set.

Melt the chocolate with vegetable oil. Dip the pastries into the chocolate on one side.
