Step 1

Beat the eggs, sugar, and vanilla sugar well with a whisk. Gradually add the milk in a thin stream along with the vegetable oil. Continue beating.

Mix the flour with the baking powder. Add the mixture to the dough and stir well.

Knead a firm dough. Divide it into 3 equal parts and roll them into balls.

Roll out the dough into a rectangular shape on a silicone or non-stick surface. Trim any uneven edges. You should get 3 identical, smooth layers and some trimmings. Use the trimmings to form a small mini-layer, which we will later use as a topping for the pastries.

Place the cake layers in a preheated oven at 200 degrees and bake for 10–13 minutes. The key is not to overbake them. If they dry out, they will crumble badly.

We proceed to prepare the cream. Take 100 ml of milk, flour, vanilla sugar, and granulated sugar. Whisk until smooth. Heat 400 ml of milk over the stove. Add the remaining cream mixture, stir, and place the entire mixture over the heat. Constantly stir and bring to a boil. Then remove from heat.

Beat the melted butter with a mixer, gradually pouring in the remaining cream. Squeeze the juice of 1 lemon and mix thoroughly.

Spread the ready-made cream between the cake layers. Stack them one on top of the other. You should end up with a three-layer cake.

Grate the leftover crust on a grater or crumble it by hand. Decorate the pie with crumbs from this crust.

The cake should soak for at least 10–12 hours. Then cut it into 12 pastries.
