
Baked buns with meat and other fillings
Description
Homemade pastries for tea. I bake the buns in the oven, which allows me to make a whole baking tray at once. These buns are delicious with various fillings: meat, cabbage, mushrooms, as well as sweet fillings such as cottage cheese, berries, fruits (fresh or frozen). They can be served with tea or coffee.

1. Take two types of meat (pork and beef), wash them thoroughly, and cut into small pieces. Place the meat into a pot and boil until cooked.

2. Cool the boiled meat and pass it through a meat grinder. Cut the onion very coarsely and fry in a pan until golden brown.

3. Add the sautéed onion to the minced meat (ground meat) and mix; you can add a little salt.

4. Crack the eggs into the bowl of a mixer and beat until a fluffy foam forms. Add slightly less than a cup of sugar (reserve 3 tablespoons) and beat again.

5. Slightly warm the water until it is barely lukewarm. Pour half of it into a wide container, and into the second half add a pinch of salt, sugar (3 tablespoons), and mix. Then add the fresh yeast and stir well.

6. To the water with yeast, add a little flour using a wooden or silicone spatula until the consistency resembles that of pancake batter.

7. Place the container with flour and yeast into a large pot, cover the pot with a lid (or a towel), and leave it in a warm place for 15–20 minutes to let the dough rise, then pour it into a pot.

8. Add the remaining water to the pot, along with the beaten eggs, and mix well.

9. Add the remaining flour and knead the dough, then pour in 100 milliliters of vegetable oil. The dough should be slightly sticky to the hands; do not over-flour it.

10. Take the butter out of the refrigerator in advance, then cut it into small cubes and add it to the dough. Knead it in and let the dough rest for 30–40 minutes.

11. Our dough has risen very well; pinch off small pieces from it. Grease the table with vegetable oil, then use your hands to flatten each piece on the table. Place 1 tablespoon of filling in the center, then pinch the edges closed.

12. Perform the same actions with all the dough, then place everything into a baking pan previously greased with vegetable oil.

13. Bake the buns in a preheated oven at 180-200 degrees Celsius for about 20 minutes, then take them out and brush with beaten egg yolk, return to the oven and bake for another 8-10 minutes. The buns turn out golden brown, fluffy, and very soft.
