
Oven-Baked Pies
Description
The recipe won't take much time. I'm happy to share it with you. Serve warm or chilled. Perfect with tea.

1. Prepare the necessary ingredients.

2. Dissolve the yeast in warm milk, add the sugar and flour (2 tbsp.), and place in a warm spot for 15 minutes until a frothy cap forms on top.

3. Sift the flour into a deep bowl, add the salt, and make a well in the center. Add the risen sponge and a lightly beaten egg. Mix, then add soft butter and knead the dough. Knead the dough for at least 10 minutes. Shape the dough into a ball, place it in an oiled bowl, cover, and let rise in a warm place for 1½ hours.

4. The dough should rise to 2–3 times its volume. While the dough is rising, prepare the filling. For example, for a meat filling: finely chop the onion and sauté it in hot oil until golden. Add the ground meat and cook until browned. Dice the hard-boiled egg into small cubes and finely chop the parsley. Combine everything, season with salt and pepper to taste, and mix well.

5. Punch down the dough and divide it into 50 g portions. Shape the pieces into balls and cover.

6. Roll each ball of dough into a round flat disc. Place the filling in the center of each, fold in half, and seal the edges. Place the pastry on a parchment-lined baking sheet seam-side down. Cover and let rise in a warm place for 30 minutes.

7. Beat the egg yolk with 1 tbsp. water and brush the tops of the pies. Bake in a preheated oven for 12–15 minutes at 210°C; adjust the time to suit your oven.

8. Cool the baked pies completely on a wire rack under a cotton towel; store in a closed container.
