
Plum-filled buns fried in a pan
Description
The baking is simple and quick. A major advantage of frying pies in a pan is the speed of preparation. But besides that, they have their own unique taste. To be honest, I absolutely love pan-fried pies with any filling whatsoever—be it potatoes, cabbage, or apples. Usually, I make pies using kefir dough, as it's easier and faster to prepare. This was only the second time I made fried pies with yeast dough, and they turned out much tastier than the ones I was used to before. These pies are much more tender—I'd even say fluffy. Anyway, give them a try!

Step 1

Prepare all the necessary ingredients. You can use any plums; mine are very sweet, so I add almost no sugar. However, if the plums are sour, you will need to add a few tablespoons of sugar.

Warm the milk to a temperature of about 35 degrees. It's very convenient to do this in a microwave, but if you don't have one, simply pour the required amount of milk into a saucepan and heat over low heat for just one minute. Dissolve the yeast in the warm milk, then add the sugar. Let the mixture sit for 10–15 minutes, until the yeast starts to activate. As soon as a thick, foamy layer forms on the surface, add the salt and flour.

Knead a very soft dough; it's okay if it sticks slightly to your hands. Transfer the dough to a deep bowl, cover with a clean towel, and let it rise in a warm place. For proofing, you can conveniently use a multicooker—simply select the appropriate setting or turn on the "Multicook" function, setting the temperature to 35°C for 30 minutes.

After 30 minutes, the dough will have more than doubled in size. It should be removed from the container and kneaded, then left for another 10 minutes on the working surface.

Meanwhile, prepare the filling. Wash the plums, halve them, and remove the pits. Cut each half into small cubes. As I mentioned earlier, I add almost no sugar to the plums, meaning I don't mix sugar in. I only slightly sweeten the plums when shaping the buns, directly on the dough.

Divide all the dough into 10 parts. Roll out each part thinly into an oval shape. Place a filling of plums in the center, then sprinkle a pinch of sugar on top.

Pinch the edges and turn the buns seam-side down.

Heat vegetable oil in a frying pan and fry the buns over medium heat until golden brown.
