Plum buns made from yeast dough
Description
Perfect with tea and coffee. Besides plums, you can use any other filling. Yeast dough can be made from scratch or store-bought. Instead of yeast dough, you can also use puff pastry or unleavened dough. I wanted to make the dough myself. The buns turn out fluffy, soft, and aromatic. Serve warm or chilled. Ideal with tea.

Step 1

1. Crumble the yeast by hand into a bowl, add 100 grams of sugar.

Step 2

2. I pour the milk into a saucepan and heat it to room temperature.
- 3
Step 3

3. Pour the warmed milk into the bowl with the yeast and sugar, and mix well.
- 4
Step 4

4. I sift the flour in advance to make the baked goods lighter and fluffier, then add 500 grams of flour and a pinch of salt.
- 5
Step 5

5. In a separate bowl, I crack the eggs and whisk them with a whisk until foam forms.
- 6
Step 6

6. I pour the beaten eggs into the flour and milk.
- 7
Step 7

7. I transfer the butter to a saucepan and melt it on the stove, then let it cool slightly and pour it into the dough.
- 8
Step 8

8. I knead the dough, adding flour as needed, until it becomes elastic and soft. I cover it with a towel and leave it at room temperature to rise.
- 9
Step 9

9. Wash the plums thoroughly, then halve them and remove the pits.
- 10
Step 10

10. I peel the chopped plums and mash them into a puree using a blender.
- 11
Step 11

11. To the plum puree, I add 200 grams of granulated sugar and starch (corn or potato).
- 12
Step 12

12. Mix the ingredients thoroughly (you can add more sugar to taste).
- 13
Step 13

13. I slightly knead the dough, which has risen 1.5-2 times, with my hands and turn it out from the bowl onto a floured work surface.
- 14
Step 14

14. Divide the dough into small portions, which will ultimately serve as the base for the buns.
- 15
Step 15

15. Roll each piece into a small flatbread, place plum filling inside.
- 16
Step 16

16. Carefully fold the edges and shape the pie so that the filling does not leak out during baking.
- 17
Step 17

17. Line a baking sheet with foil, grease it with vegetable oil, place the buns on top, brush each with egg yolk, and bake for 25 minutes at 200 degrees.
- 18
Step 18

18. Serve the buns slightly cooled with a cup of tea.
