Oven-baked plum buns

    Prepare the ingredients for the buns. You can set the plums aside for now; they will be needed in about four hours. Let's make the dough!

    Warm a glass of milk to 40 degrees; if you don't have a thermometer, it should be warm but not hot—comfortable enough to keep your finger in the glass. Add a pinch of salt, 5 tablespoons of sugar, and yeast. Mix and dissolve all ingredients in the milk. Add an egg and mix again.

    Add a glass of sifted flour, mix the starter and leave it in a warm place for 10–15 minutes to allow the yeast to activate and become bubbly. You will see a foamy layer on top, which means it's time to add the remaining flour.

    During kneading, add vegetable oil. The dough should turn out elastic, soft, and pliable. The amount of flour is approximate and may require slightly less or more. To make the buns light and airy, avoid making the dough too stiff. Cover the container with dough using a dry towel and let it rise in a warm place for 4 hours.

    The dough has risen. It's time to shape the buns.

    For the filling, wash the plums, remove the pits, and cut into pieces. Add a couple of spoons of sugar and mix the filling.

    Divide the dough into 20 pieces for small buns, or into 10 pieces for larger ones. Roll each piece of dough with a rolling pin or your fingers, and place a portion of the filling made from plums in the center.

    Pinch the edge as you would with regular buns, then turn seam-side down.

    Line baking sheets with parchment paper; I baked the buns on two large baking sheets. There's no need to grease the parchment paper as it's non-stick. Place the buns a small distance apart from each other. Cover with a dry towel and let rise in a warm place for 30 minutes. Then brush with egg yolk and bake at 180°C (356°F) for 30 minutes.

    Plum-filled oven-baked buns are ready! Remove them from the baking sheet, cool on a wire rack — and serve!
