Description

The dough recipe here is versatile. You can use it not only for pirozhki, but also for pies, rolls, and buns. This quantity of ingredients yields 13 medium-sized pirozhki. If you prefer, you can make the baked goods smaller and reduce the size of the pirozhki.

    First, prepare the sponge for the dough. Warm the milk in the microwave for 30 seconds to activate the yeast. Sift the flour and take 6 tablespoons from the total amount. If using dry yeast, reduce the amount by three times, i.e. 10 grams will be enough. Dissolve the sugar with the yeast in the warm milk, add the flour. Mix the mixture with a whisk and cover with plastic wrap. Leave the sponge in a warm place to rise.

    When the sponge is ready, combine it with the remaining dough ingredients: vegetable oil, salt, eggs, and flour.

    It is advisable to knead the dough in a stand mixer, but you can also do it by hand. Transfer the sponge starter and flour into the mixer bowl. Pour in the vegetable oil. Beat the eggs with salt and add them to the dough.

    The finished dough should be soft, elastic, and not sticky. Roll the dough into a ball. Put it in a bowl, cover with plastic wrap, and leave in a warm place for about 30–40 minutes.

    While the dough rises, prepare the filling. For the filling, boil the eggs for 5–7 minutes, transfer them to cold water, and cool. Finely chop a large bunch of green onions and combine with the chopped eggs. Season the filling with salt and mix.

    The filling and dough for making pies are ready.

    Divide the dough into 80-gram pieces. Roll each piece into a ball and place on a board, covering with a kitchen towel so it does not dry out.

    Roll each ball of dough into a flat round, place a portion of the egg filling in the centre, then seal the edges of the dough and shape the pastry as you like.

    Place the finished pastries on a baking sheet lined with parchment paper. Cover the baking sheet with a cloth and leave for 15 minutes at room temperature. Brush the pies with a mixture of egg yolk and water. Sprinkle the tops of the pies with sesame seeds.

    Bake the pastries in an oven preheated to 170–180 °C until they are appetizingly golden brown.
