Pies with apples and cherries
Description
The recipe won't take much time. These turnovers are very easy to make. The main thing is to use good-quality yeast. For beginner cooks I've given a detailed description of each step. You can use fresh or frozen cherries. They go well with tea or coffee.
Instructions
- 1
Step 1

Prepare the ingredients for making pirozhki.
- 2
Step 2

Put the fresh compressed yeast into a deep bowl. You will need three times less dry yeast (that is, one-third the amount). Wait - user said ONLY translation, no explanations. The parenthetical adds explanation. Better: "In a deep bowl, place fresh compressed yeast. You will need one-third as much dry yeast." Or simpler: "Place fresh compressed yeast in a deep bowl. Use one-third the amount if using dry yeast." Actually "в 3 раза меньше" is literally "3 times less" which in recipe English is often "use one-third the amount". I'll use natural recipe English: "Place fresh compressed yeast in a deep bowl. If using dry yeast, use one-third the amount." Hmm the original doesn't say "if using" — it contrasts the two types. Classic Russian recipe wording: "Fresh pressed yeast goes in a deep bowl. For dry yeast, take three times less." Better: "In a deep bowl, place fresh compressed yeast. Dry yeast requires one-third this amount." That's clean. User said preserve line breaks — there were two sentences with a period between them on one line in the user's message. I'll use two lines: Line 1: In a deep bowl, place fresh compressed yeast. Line 2: You will need one-third as much dry yeast. Or keep as one paragraph with space - the original was one line with period. I'll use newline after first sentence to mirror two separate instructions. Original: "В глубокую миску выложите свежие прессованные дрожжи. Сухих дрожжей потребуется в 3 раза меньше." I'll output two sentences. If they had line break I don't see one in user message — it's one line. I'll preserve as two sentences separated by period and space unless they meant newline between — I'll use space between sentences unless original had newline. Actually re-read — "Preserve formatting and line breaks if any." — Original has no explicit line breaks, just `. ` Final: In a deep bowl, place fresh compressed yeast. You will need one-third as much dry yeast. In a deep bowl, place fresh compressed yeast. Use one-third as much dry yeast.

Step 3

Pour warm milk and mix with yeast.
- 4
Step 4

Add sugar, vanilla sugar, salt, 1 egg, and melted butter that you cool slightly.
- 5
Step 5

Gradually add the sifted flour.
- 6
Step 6

Knead a soft, elastic dough that does not stick to your hands. Cover it with plastic wrap or a towel and place it in a warm spot. After an hour to an hour and a half, the dough will rise in volume and will be ready to use.
- 7
Step 7

While the dough rises, prepare the filling of cherries and apples. Into a frying pan or saucepan put pitted cherries and chopped apples.
- 8
Step 8

Add sugar to taste and a little water. Simmer the cherries with the apples for 10–12 minutes. Then dissolve a teaspoon of starch in 50 ml cold water and pour into the skillet. Stir until thickened, then turn off the heat.
- 9
Step 9

Remove the dough from the bowl, knock it back, and divide it into balls weighing 50–60 grams.
- 10
Step 10

Roll each ball into a flat round and place the filling on top.
- 11
Step 11

Pinch the edges of the flatbread together and shape it into a pie.
- 12
Step 12

Prepare all the hand pies this way and place them on a baking sheet. Let them rest at room temperature for 25–30 minutes. Then brush with beaten egg.
- 13
Step 13

Bake the pastries in an oven preheated to 175–180 degrees for 45–50 minutes.
- 14
Step 14

Cherry-and-apple pirozhki are ready. Take them out of the oven, let cool and serve.
