
Pirozhki with vodka
Description
It goes perfectly with tea and coffee. Dough with alcohol added always turns out well. The alcoholic base can vary, from spirits to beer. But if you use spirits, the minimum amount is one teaspoon and the maximum is one tablespoon. The weaker the alcohol, the more you can use within these amounts. From this dough you can make pies with any filling, sausages baked in dough, or sweet buns. The baking is done. Serve at the table.

Prepare all the ingredients you need to make hand pies with dough. Take everything out ahead of time so it comes to room temperature.

In a bowl, mix warm water, yeast, sugar, and two tablespoons of flour until smooth. Cover and set in a warm place for 20–30 minutes. During this time the yeast should activate, the mixture should become airy and increase in volume. That means the sponge is ready.

Pour the sponge into a deep bowl, add salt, the egg, sugar, vodka, and mix well.

Add soft butter and sour cream to a bowl.

Pour in the warm milk and vegetable oil, and mix until smooth.

Sift the flour into a bowl and knead a soft, non-sticky dough.

Form the dough into a ball, cover it, and place it in a warm place for one hour to rise.

Divide the prepared dough into equal parts and roll them into balls, cover them, and let them rest for 10 minutes. Then roll each ball out into a flat cake and add the filling.

Shape the pies and place them on a baking sheet greased with vegetable oil, cover, and let them proof for 15–20 minutes.

Brush the risen pies with egg and bake in a hot oven at 180°C until done. Remove the baking sheet with the pies from the oven, brush with vegetable oil, and let stand for 5–10 minutes.
