
Cottage cheese and herb pastries
Description
Perfectly pairs with tea and coffee. Prepare the starter: mix flour and dry yeast in 50 ml of warm water, then let it sit for 15–20 minutes until the yeast rises. Then add flour to achieve a batter-like consistency (use flour from the total amount specified). Cover the starter and leave it in a warm place for 2–2.5 hours.

Knead the dough: sift the remaining flour, add sugar, egg, and sponge. During kneading, add 50 ml of water. Cover the kneaded dough and let it rest for 20–30 minutes. Then place the dough onto the table and knead again. Cover the dough once more and leave it in a warm place until it doubles in volume.

For the filling, mix cottage cheese, egg yolk, chopped herbs, and add salt and pepper to taste.

Line a baking sheet with parchment paper. Divide the risen dough into pieces of desired size, shape each piece, cover, and let rest for 15–20 minutes. Then shape the pieces into buns, place them seam-side down on the baking sheet, cover, and let rise for 40 minutes.

Brush the pie blanks with egg before baking. Bake at 180-200 degrees until done.
