
Cottage cheese and raisin buns from yeast dough
Description
Homemade pastries for tea. The most challenging part of making cottage cheese and raisin buns is preparing the homemade dough, which will take about 4 hours. If you don't like working with dough, you can certainly buy ready-made dough, but homemade is always better and fresher. Make the starter: add a pinch of flour and dry yeast to 50 ml of warm water, mix well and let stand for 15–20 minutes until the yeast rises. To this mixture, add enough flour (taken from the total amount specified in the recipe) to make a batter-like dough. Cover the starter and let it rise in a warm place for 2–2.5 hours.

Now knead the dough: sift in the remaining flour, add sugar, egg, and the risen sponge. During kneading, gradually add 50 ml of water, then cover the dough and let it rest for 20–30 minutes.

Place the rested dough on a dry surface and knead thoroughly, then cover it again and leave in a warm place until doubled in volume. Divide the risen dough into pieces of desired size, shape each piece into a ball, cover, and let rest for 15–20 minutes.

Prepare the filling just before baking. Mix cottage cheese, raisins, sugar, vanilla sugar, and add 1 egg yolk. Then form small pieces into buns. Roll out the dough and add the filling.

Line a baking sheet with parchment paper, place the buns seam-side down, cover, and let rise for 40 minutes. Before baking, brush the buns with egg. Bake at 180-200 degrees until done (golden color).
