Pirozhki with tripe

Description

The bake is quick and easy to make. Tripe is mainly beef or pig stomach. For the filling, you need to boil it until tender first. To do this, cover it with cold water and leave for 6 hours, changing the water twice. Then rinse, cover with water, bring to a boil, drain and rinse. Cover the rumen with clean water, add salt, black peppercorns, bay leaf, onion and carrot. Simmer the tripe on low heat for 3 hours after it comes to a boil. You can boil the tripe ahead of time and keep it in the refrigerator for one day or put it in the freezer. The bake is ready. Serve at the table.

    Prepare all the ingredients you need for making pies with tripe. I already have boiled beef rumen, so it will take less time to reach the final result.

    Add the sugar and salt to warm water, crumble in the fresh yeast, and mix until smooth.

    Crack an egg into it, pour in vegetable oil, and mix well.

    Sift the flour into the liquid and knead a soft, not stiff dough. Knead the dough for at least 5–7 minutes. Shape the dough into a ball, place it in a deep bowl greased with vegetable oil, cover, and leave in a warm place for 40–50 minutes to rise until doubled in size.

    Peel the onion, chop it finely, and put it in a frying pan with hot oil. Fry the onion for 7 minutes over medium heat until soft.

    Pass the tripe through a meat grinder fitted with a fine plate, or chop it in a blender. Add the tripe to the sautéed onion, season with salt and pepper, and cook over medium heat for 5–7 minutes more, stirring. Remove from the heat and let cool.

    Dust your work surface with flour and turn the risen dough out of the bowl onto it. Divide it into equal portions and roll into balls. Cover them and let rise for 10 minutes.

    Roll each ball of dough into a flat round, spread the tripe filling on it, and shape into pies.

    If you like, line the baking sheet with parchment paper and arrange the pies seam side down, spaced apart. Cover the pies and let them rest for 10–15 minutes in a warm place to rise. Brush the tops of the pies with beaten egg.

    Place the baking sheet with the pies in a hot oven and bake at 180°C for 25–30 minutes until golden brown. Remove the baked pies, brush the tops with vegetable oil, cover with a clean towel, and let stand for 5–10 minutes so they soften.
