
Salmon pirozhki
Description
Home baking for tea. Salmon pies are certainly not a delicacy, but neither are they quite an everyday dish. When we buy a whole salmon, we always set aside some of it for the pies our family loves so dearly. For me, as the person who does all the cooking, I appreciate salmon pies less for their flavour than for how simple they are to make—no fuss at all, everything is quick and easy. As for the family, they simply adore these soft, melt-in-your-mouth pies—they only ever complain that I make too few of them and not often enough :) But good things are best in moderation, aren’t they? The baking is ready. Serve at the table.

Here are the ingredients we’ll use to make the pirozhki.

Let's get started on the filling. Finely chop the onion and fry it in vegetable oil until golden brown.

Grate the cheese on a grater.

Cut the salmon (boneless and scaled, of course) into small cubes, then mix with grated cheese and sautéed onion.

Roll out puff pastry into a thin sheet and cut out circles from it using a large cup or glass.

Place a little of our filling in the center of each circle, then fold the pastry. An important point: you need to fold the pastries so that a small opening remains at the top. For clarity, see the photo.

Place the pies on a baking sheet lightly greased with oil. Brush each pie lightly with beaten egg. Put the baking sheet in the oven and bake for 15–20 minutes at 180 degrees.
