
Pirozhki with dried mushrooms
Description
Perfect with tea and coffee. Pies with dried mushrooms turn out more aromatic than just with fried mushrooms. For a piquant taste, you can add some chopped salted mushrooms to the filling and fry them together with the dried mushrooms. If you are making lean pies, brush the surface with sweet strong tea and then the crust will also turn out a beautiful rich color. Serve warm or chilled. Perfect with tea.

Prepare all the ingredients needed for making pies with dried mushrooms.

Soak dried mushrooms for 8 hours, then boil for 40–50 minutes until tender. Drain the mushrooms in a colander and let the liquid run off.

Finely chop the onion and sauté it in a frying pan with vegetable oil over medium heat for 7–9 minutes, until softened.

Pass the boiled mushrooms through a meat grinder and add them to the pan with the sautéed onion. Stir and fry for 5–10 minutes until the liquid has evaporated. Remove the filling from the heat, season with salt and pepper to taste, and let cool.

Dissolve the fresh yeast, salt, and sugar in warm water. Pour in the vegetable oil and stir. Mix half of the flour with the baking powder and add it to the liquid. Stir everything until smooth. Gradually adding more flour, knead a soft, even dough. Grease a deep bowl with vegetable oil and place the dough in it. Cover the bowl with a clean cloth and set it in a warm place to rise for about 40–60 minutes.

Divide the risen dough into equal pieces and shape into balls. Cover the dough with a cloth and let rest for 10 minutes.

Roll out each ball and place the filling.

Shape the pies and place them seam side down on a baking sheet greased with vegetable oil or on greased baking foil. Cover with a cloth and leave for 10–15 minutes to rise. If desired, brush the surface of the pies with beaten egg or milk.

Place the baking sheet with the pies in a hot oven and bake at 180 degrees for 20–25 minutes. Remove the pies and brush the tops with vegetable oil. Cover them with a cloth and let stand for 5–10 minutes.
