Pies with salted milk mushrooms and rice

Description

The recipe won’t take much time. There’s no need to salt the filling for the pastries, because the milk caps already contain enough salt. If the mushrooms are very salty, I recommend soaking them in cold water and changing the water until you get the desired result. You can adjust the amounts of filling ingredients to taste. You can serve these with tea or coffee.

    Prepare all the ingredients you need for pies with salted milk caps and rice. Rinse the mushrooms and let all the water drain off. Rinse the rice and boil it in water. Then rinse the cooked rice and let the water drain off.

    Pour warm water into a bowl, add compressed yeast, salt, sugar, and crack in an egg. Mix everything well until smooth and uniform.

    Pour vegetable oil into the liquid and mix. Sift the flour into the liquid part and knead a soft, non-sticky dough. Shape the dough into a ball and place it in a deep bowl greased with vegetable oil.

    While the dough is rising, prepare the filling. To do this, finely chop the onion and fry it in a pan for 5-7 minutes. The onion should become soft and golden.

    Pass the salted milk caps through a meat grinder and add them to the fried onions. Sauté everything for 5 minutes over medium heat, stirring.

    Add cooked rice to the milk caps, stir, and remove from the heat.

    Divide the risen dough into equal pieces and shape them into balls. Place them on a floured work surface, spaced apart. Cover the dough and let stand for 10–15 minutes so the portions can rise again.

    Roll the dough balls into flat rounds and spread the filling.

    Shape the pies and place them seam side down on a baking sheet or parchment paper greased with vegetable oil. Cover and let rest in a warm place for proofing for 10–15 minutes. Brush the tops of the pies with egg and bake in a hot oven at 180 degrees until done. Remove the baked pies, brush the tops with vegetable oil, cover, let stand for 5–10 minutes, and serve.
