
Sweet sorrel buns
Description
In spring, many dishes are made from sorrel, for example, buns baked with sorrel and other ingredients. My favorite are sweet sorrel buns baked in the oven. They remind me of childhood, as my grandmother used to bake them this way. The dough for buns is very easy and quick to prepare, and it turns out perfectly for everyone without exception. You can experiment with the filling: you can use raw sorrel in the buns, scald it, or lightly stew it. I prefer the latter method, as it keeps all the juice inside the buns, and thanks to the starch, it doesn't leak out. Be sure to bake these buns—they are delicious. The pastry is ready. Serve at the table.

Add 2 tablespoons of sugar, 3 tablespoons of flour, and dry yeast to warm milk.

Mix until smooth and let stand for 15–20 minutes in a warm place.

Now add vegetable oil and salt, mix well.

Add the sifted flour in small portions. Knead a smooth dough that does not stick to your hands. Place the dough in a warm spot and let it rise by about one and a half times.

Thoroughly wash the sorrel. It's better to soak it in water first, then rinse it under running water.

Thoroughly pat the washed sorrel dry with a towel. Then chop the leaves. If the stems are not too tough, chop them as well, but finer than the leaves.

Place the chopped sorrel into a bowl and press it down with your hands to reduce its volume.

Our dough has already risen, so let's start shaping the buns. Divide the dough into small pieces, roll each piece into a flat round about 4-5 mm thick. Place the sorrel in the center of the round.

Add one-third teaspoon of starch and two-thirds teaspoon of sugar to the sorrel.

And tightly crimping the edges, shaping the buns.

Turn on the oven and let it heat up to 190 degrees. Line a baking sheet with parchment paper and place the buns on it. Brush the tops with beaten egg.

Bake for 20-25 minutes until golden brown. Cover the baked buns with a towel for about 10 minutes, then remove them from the baking sheet.
