
Pastries with filling of your choice
Description
The recipe won't take much time. As a filling, you can choose jam, jelly, or chocolate spread. Serve warm or chilled. Perfect with tea.

1. Mix the flour and salt in the bowl of a food processor. Add the butter cut into pieces and pulse until the mixture resembles crumbs. Add the ice water and egg yolks, and process until smooth. Turn the dough out onto a lightly floured surface, divide into two equal portions, and shape each into a 1 cm thick rectangle. Wrap each rectangle in plastic wrap and refrigerate for at least 20 minutes or up to 2 days. Line one or two baking sheets with parchment paper and set aside.

2. Lightly dust the work surface with flour and place the dough on it. Sprinkle the top of the dough with a small amount of flour.

3. Shape one portion of the dough into a large rectangle measuring 25x30 cm. Cut the dough in half vertically and horizontally to make 4 rectangles.

4. With a spoon, place about half a cup of filling at the edge of the rectangles.

5. Fold the rectangles in half and pinch the edges. Repeat with the remaining dough and filling. Cover the buns with plastic wrap and place in the freezer for 4 hours. Frozen buns can be stored for up to 3 months.

6. Place the buns on a baking sheet, spacing them 5-7 cm apart. Preheat the oven to 220°C. Brush the buns with beaten egg and sprinkle with a teaspoon of sugar. Make two small holes on the tops of the buns to allow steam to escape during baking. Bake for 15 minutes, then reduce the temperature to 175°C and continue baking for another 10-15 minutes, until golden brown. Let cool on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely. Serve the buns warm or at room temperature. Wrapped buns can be stored at room temperature for up to three days.
