
Pirozhki with meat and rice
Description
The pastries are easy and quick to make. In general, fried pies made from yeast dough with some kind of filling are a classic of Soviet cuisine—Soviet fast food. Of all the popular varieties of such pies, I have always liked meat-and-rice pies the most—they are the heartiest and, in my opinion, the tastiest. Meat-and-rice pies were popular in Soviet canteens not only for their flavor, but also because they were an excellent way to use meat that had been cooked for soup but never made it into the soup itself. In other words, you could get two dishes from one piece of meat—soup and pies. I do roughly the same. Sharing my recipe! :) Serve warm or chilled. Perfect with tea.

Boil the rice until fully cooked.

Fry the onion until golden.

Pass the boiled meat through a meat grinder.

Mix the onion, meat, and rice.

Season with salt and pepper to taste — and the filling is ready.

Now let’s get started on the dough. Mix the warm milk with the sugar and pour it into a bowl with the flour and yeast. Do not stir.

Without stirring, leave the bowl in a warm place for 15 minutes — the yeast needs to activate.

Add salt and eggs.

Add a little oil.

Mix. If needed, work in more flour until the dough is firm enough.

Thoroughly knead the dough by hand until it no longer sticks to your hands.

In this recipe you do not need to wait for the dough to rise. As a rule, by the time you shape the last pirozhok, the first will already have risen and be ready to fry. So with a sharp knife, cut the dough into several pieces.

Cut each of these pieces into several more equal pieces; those are what we will use to shape the pies.

Using a rolling pin, roll each small piece of dough into a circle.

Place a tablespoon of filling in the centre of the round flatbread.

Fold the flatbread in half and seal the edges.

It should turn out as a beautiful pastry like this.

Place the formed pies on a board dusted with flour.

When all the pirozhki have been shaped, heat a large amount of oil in a skillet and fry them in it—starting with those that were shaped first (for the reason given above). Fry until golden brown on one side...

Then flip and fry until golden on the other side. Do not fry too long—the filling is already cooked; you only need to brown the dough.

Place the finished pies in a bowl, and fry the next batch in the pan. Repeat until you run out of pies. You can serve the pies warm or cold—they keep in the refrigerator for several days. :)
