
Oven-baked meat and potato pies
Description
The recipe will not take much time. You can make the pastries any shape and size, or even as a single large pie. The meat can be finely diced or ground. Pork can be replaced with beef, lamb, or even poultry.

Prepare all the necessary ingredients for making meat and potato pies.

Pour warm water into a bowl, add fresh yeast, salt and sugar, and stir until smooth and fully dissolved. Crack an egg into the mixture, add vegetable oil, and stir until smooth.

Sift the flour, add it to the liquid mixture in portions, and knead a soft, non-sticky dough. Shape the dough into a ball and place it in a deep bowl greased with vegetable oil. Cover the bowl and set it in a warm place for 40–60 minutes until the dough rises to 2–2.5 times its size.

Peel the potatoes and boil until tender in salted water over medium heat. Drain the cooking liquid and mash into a puree.

Cut the pork into small cubes, season with salt and pepper, and fry in half of the vegetable oil until cooked through. Transfer the fried meat into the mashed potatoes.

Finely chop the onion and sauté it in the remaining vegetable oil until tender. Add it to the mashed potatoes with meat, stir, and season with more salt if needed.

Divide the dough into equal portions and roll into balls. Cover them and leave for 15–20 minutes to rise.

Roll the risen dough balls into flat rounds and spread the filling on them.

Shape the pies and arrange them seam side down on a baking sheet greased with vegetable oil. Cover with a clean cloth and leave for 20 minutes to rise. Beat the egg yolk with milk and brush the tops of the pies.

Place the baking sheet with the pies in a hot oven and bake at 180°C for 15–20 minutes until golden brown and cooked through. Brush the finished pies with vegetable oil, cover, and let rest for 10 minutes.

Take out of the oven and serve warm or cooled.
