Delicious pastries for the whole family. Chanterelles are an amazingly tasty ingredient, and their culinary uses are very versatile. We live in a forested area where chanterelles grow abundantly, so we always have them on hand during summer and autumn. One of our favorite ways to prepare them is chanterelle-filled buns, which are passionately loved by every single member of our family. To make chanterelle buns, follow these steps: 1. Finely chop the washed chanterelles. 2. Finely chop the onion. 3. Sauté the onion together with the mushrooms. 4. Finely shred the cabbage. 5. Simmer the cabbage until tender. 6. Squeeze excess liquid from the cabbage and mix it with the mushrooms. 7. Boil 2 eggs, chop them finely, add to the filling, and season with salt. 8. Sift flour into a deep bowl and mix it with sugar and salt. 9. Neutralize the baking soda with vinegar and add it to the dough. 10. Pour in 1 tablespoon of oil. 11. Mix kefir with sour cream and pour the mixture into the flour. 12. Knead the dough, adding oil, until smooth and uniform. 13. Let the dough rest for half an hour. 14. Roll the dough into a log and divide it into equal portions. 15. Roll each portion in flour, shape into flat rounds, place filling in the center, and seal the edges tightly. 16. Place the buns on a baking sheet, brush with beaten egg, and bake at 200°C (390°F) until fully cooked. The best way to check readiness is by color—once the tops turn golden brown, they're ready. Serve chanterelle buns with sour cream. By the way, if you don't like cabbage, you can omit it from the filling—simply add more onion, for example, or some potatoes—whatever you prefer. ;)
