
Mushroom Pies with Wild Forest Mushrooms
Description
The recipe won't take much time. It's best to use store-bought puff pastry. While it's thawing, prepare the filling. Sauté onions with button mushrooms, soak and boil wild mushrooms. Then shape the buns and bake in the oven until golden brown for 20 minutes. The pastry is ready. Serve at the table.

We peel and dice two onions. Generally, the more onion in the filling, the juicier it will be.

Cut fresh mushrooms into cubes.

Sauté the onion in vegetable oil. If you start with the mushrooms, the onion will never brown.

Add the sliced mushrooms to the pan with the onion.

Soak the wild mushrooms beforehand. I'm using russulas. Drain the soaking liquid and strain it. You can save this liquid for other dishes (for example, risotto). Cover the mushrooms with fresh water and boil for 15 minutes. Cut into small pieces and sauté together with the mushrooms.

Remove the puff pastry from the packaging. Lightly dust with flour. Thaw and roll it out slightly thinner. Cut the pastry sheet into rectangles. Mentally divide each rectangle into two halves. Place the filling on one half. Grate hard cheese and sprinkle it over the filling. Cover the filling with the other half of the dough and seal the edges.

Transfer the shaped products onto a baking sheet lined with parchment paper.

Preheat the oven to 180 degrees. Brush the pies with beaten egg. Bake until done. Serve at the table.
