Pirozhki with pears

Description

It pairs perfectly with tea and coffee. Delicate short pastry with sweet, juicy pears tastes wonderful together—so if you have pears tucked away in the fridge, try making these tasty pear pastries. A lovely dessert with tea or coffee. It takes a bit of time and effort, but it’s worth it: the pastries turn out simply superb. They’re also very good served with ice cream, by the way. The bake is done. Serve at the table.

    Mix the flour with the powdered sugar and salt.

    Add butter cut into small cubes to the flour.

    Rub the dough until it has the consistency of crumbs (as in the photo).

    Beat the eggs, add the juice of half a lime (or lemon) and ice-cold water. Mix.

    Pour the liquid into the dough and mix. The dough should come together into a firm, compact lump.

    Transfer the dough to a lightly floured surface, knead and shape it into a ball. Wrap the ball in plastic wrap and refrigerate for about 30 minutes.

    Meanwhile, while the dough rises, prepare the pear filling. Peel the pears, remove the cores, and cut into small cubes. Add half the sugar, a little lemon juice, and the zest of half a lemon. Mix together.

    In a frying pan, melt the butter, add the pears and a cinnamon stick. Simmer over low heat for about 5–10 minutes.

    Take the dough out of the refrigerator and roll it into a thin sheet, then cut circles out of it.

    Grease the baking pan with butter, put a circle of dough on the bottom, as shown in the photo.

    Spread the pear filling onto the rounds.

    Cover the filling with another circle of dough, thus forming a pirozhok. Seal the edges well.
