
Pea pirozhki
Description
I first tried pea pies at my aunt's when I was visiting her. Honestly, it took some convincing to get me to try them—the phrase "pea pies" didn't whet my appetite or promise anything good. But I pushed myself and tried them anyway. Whether I liked them or not—you can guess for yourselves, given that I'm now sharing my aunt's pea pie recipe with you :) I hope you'll enjoy these lenten pies too. Good luck with cooking!

Dissolve the yeast in warm water, add the salt and sugar to the same bowl, and leave in a warm place for 15 minutes.

Add the flour, mix, and leave in a warm place for one hour.

Meanwhile, prepare the filling. Boil the peas until tender and puree them using a blender or a meat grinder.

Grate the onion on a fine grater. Mix the crushed peas, onion, and baking soda. Season with salt and pepper to taste.

When the dough has risen, shape the pies. Pinch off a piece of dough, roll it into a flat round, place a little filling on the round, and fold the pie as shown in the photo.

Place the pies on a baking sheet greased with vegetable oil. Brush the pies with oil as well. Place in an oven preheated to 200°C and bake for 15–20 minutes until the dough is done.
