Pastries with feta, tomatoes, and herbs

Description

The pastry is simple and quick to prepare. These little pies make a universal snack that you can whip up in just minutes, even when guests arrive unexpectedly. Essentially, you can use any filling you like: sausage, mushrooms, ham, vegetables. A slice of tomato works perfectly as a base, and on top you can place just about anything. My favorite is feta cheese—it's pleasantly salty and pairs wonderfully with garlic. I highly recommend trying my recipe. Serve the pies cooled down or slightly warm.

    Prepare all the necessary ingredients. You can use regular tomatoes or cherry tomatoes; in the latter case, just place 3-4 slices into each pie. If you don't like garlic, you can omit it, but it tastes better with garlic.

    Rinse the tomatoes and slice them into 5-6 mm thick rounds.

    Mix feta with chopped dill and garlic pressed through a garlic press.

    Thoroughly mix the mixture with a fork.

    Start preparing the dough. Mix 1 cup of boiling water with salt, sugar, and vegetable oil (olive oil is ideal, but you can also use refined sunflower oil).

    Add the flour and knead a firm dough. You may need more or less flour than specified in the recipe—it depends on the flour itself. The main thing is to get a firm, elastic dough that does not stick to your hands.

    Divide the finished dough into 2 parts. Roll out one part into a large thin sheet (no more than 2 mm thick).

    Place tomato slices at least 2.5 cm apart from each other. Put 1 teaspoon of cheese filling on each tomato slice.

    Roll out the second part of the dough into a similar sheet and cover the filling with it.

    Using a glass, shape the buns and remove the excess dough.

    Use a fork to seal the edges of the pastries.

    Fry the buns in deep oil or simply in a heavy-bottomed pan with plenty of oil. The buns cook very quickly; as soon as they turn golden, remove them immediately, since the filling is already cooked.
