Elderberry Pastries

Description

Delicious baked treats for the whole family. Many of us don't know that elderberries are healthy and perfectly edible. My grandmother from Ukraine often baked these buns at the beginning of autumn, and she didn't have to go far to gather the berries—there was a huge elderberry bush growing right behind the house. The elderberries were very juicy, and the buns turned out incredibly tasty. I'd like to share with you the recipe for elderberry buns. It's quite simple; the most important thing is to seal the edges of the buns well so that the filling's juice doesn't leak out. Read the recipe, gather the ingredients, and start baking. 1. Dissolve 1 tablespoon of sugar in warm milk and mix in the yeast. 2. Beat the eggs with 2 tablespoons of sugar; set aside one yolk for brushing the buns. Add melted but not hot butter, salt, vanilla, and mix thoroughly. 3. Pour in the yeast mixture, stir, then gradually add flour and knead the dough. Cover the dough and place it in a warm spot for about an hour. 4. Wash the elderberries and let them drain. Then mix them with sugar and starch. The filling is ready. 5. Once the dough has doubled in volume, knead it again and divide it into 20–25 pieces. Roll each piece into a flat round, place some elderberry filling in the center, and carefully pinch the edges closed. 6. Line a baking tray with parchment paper and place the buns on it. Let them rest for 20–25 minutes, then brush the tops with the reserved yolk mixed with water or milk. 7. Bake the buns in a preheated oven at 200°C (392°F) until golden and cooked through. It's best to eat the buns slightly cooled, otherwise you might burn your mouth on the hot berry syrup. The baked goods are ready. Serve and enjoy!
