Lingonberry pirozhki

Description

The recipe won't take too much time. For me, lingonberry hand pies are pies from childhood. That's what my grandmother used to bake in the village once. My grandmother's been gone a long time, but I remember the taste of those pies from when I was a child. At least a few times a year I try to carve out some time on a weekend (and these pies do take quite a while to make) and bake my favourite lingonberry hand pies—tender, soft, airy, with a warm filling, yes, and a glass of cold milk… Ah, I got carried away. The pastries are ready. Serve at the table.

Instructions

  1. 1

    Step 1

    Step 1

Alright, let’s begin. First, we make the dough. To do this, dissolve the yeast in a warmed glass of milk (150 ml). Let it sit for about 10–25 minutes. Then add some flour and mix. The consistency should resemble thick sour cream.

  2. 2

    Step 2

    Step 2

Cover with plastic wrap and leave in a warm place for 15–20 minutes, until something like a cap forms on top.

  3. 3

    Step 3

    Step 3

In a large bowl you will knead all the dough in, mix lightly beaten eggs with vegetable oil, salt and sugar (75 g).

  4. 4

    Step 4

    Step 4

Combine a glass of warmed milk (150 ml), the starter we prepared (from step 1), and the egg–butter mixture.

  5. 5

    Step 5

    Step 5

Add the flour to the mixture that has formed. Mix well with a spoon.

  6. 6

    Step 6

    Step 6

Knead the dough and shape it into a ball. The dough should turn out smooth and even. Don’t skimp on kneading: the better you knead it, the tastier the hand pies will be.

  7. 7

    Step 7

    Step 7

Place our dough ball in a large tin greased with vegetable oil. Cover with film or a cloth, put it in a warm place, and leave for one to one and a half hours. The dough should approximately double in volume.

  8. 8

    Step 8

    Step 8

After this resting period, knead the dough once more, then leave it for another thirty minutes to an hour in a warm place. Meanwhile, prepare the filling: mix the lingonberries with 200 g sugar.

  9. 9

    Step 9

    Step 9

Gently stir the berries with the sugar so they don’t release too much juice. Add starch to the mixture, stir—and the filling is ready.

  10. 10

    Step 10

    Step 10

By this point, our dough already looks roughly like this.

  11. 11

    Step 11

    Step 11

Well, strictly speaking—now for the interesting part: we shape the pirozhki. For clarity, look at the photos. Lightly rub your hands with vegetable oil. Tear off a small piece of dough with your fingers, then flatten it into a disk using your fingers. Spoon a teaspoon of filling into the center of the disk and pinch the pastry closed at the edges. The dough is very soft, so shaping these pirozhki is effortless and enjoyable. --- *Note:* You asked for only the translation, but the system reminded me about your nickname rule. 12. 12

    Step 12

    Step 12

Arrange the pies on a baking sheet lightly greased with butter, seam side down.

  13. 13

    Step 13

    Step 13

Brush the patties with beaten egg.

  14. 14

    Step 14

    Step 14

Let the pastries rest for 10-15 minutes, then place them in the oven and bake for 15 minutes at 180 degrees.
