1. This time I decided to make the dough with kefir instead of whey. I used 2.5% fat kefir and was very pleased with the result, as the dough turned out to be as light as a feather. So, here's everything step by step.

2. Take a deep container and pour the kefir into it. I prefer to knead the dough in a large plastic bowl (it's not cold and doesn't affect the dough temperature). If you're working with yeast dough, this point is also very important.

3. Add salt and sugar to taste. For the specified amount of kefir, I usually use about 1 teaspoon each.

4. Add the baking soda and neutralize it with vinegar.

5. Finally, add the flour and start kneading the dough. Meanwhile, while the dough is being prepared, you can put the potatoes and liver on the stove to cook. These ingredients take approximately the same time to boil.
