Description
The pastry is simple and quick to prepare. Here is an easy recipe for "Metternich" pastries. The classic version uses boiled rice, but I replaced it with ham (sorry, vegetarians), and it turned out even better! These pastries are sometimes served alongside the traditional Austrian soup—delicious together! Have a wonderful day. Serve warm or chilled. Perfect with tea.

Prepare the dough. Add sugar, salt, and cubed butter to the sifted flour. Mix, make a well in the center, and add yeast and water into it. Knead the dough, then cover and let it rest under plastic wrap for 30 minutes.

Prepare the ingredients for the filling. Boil the eggs hard.

Grate the eggs and ham on a grater, finely chop the onion. Mix the ingredients and season with salt to taste.

Divide the dough into several equal parts. Roll out each part into a flatbread. Make small edges around the edges of the flatbreads and let them rest under plastic wrap for 30 minutes.

After 30 minutes, place the filling into the flatbreads, brush them with egg, and put them on a baking sheet lined with parchment paper into the oven. Bake for 30 minutes at 200 degrees.
