Description

The RARE doneness level means "rare," so don't be alarmed if the patties for the buns are golden on the outside and raw inside—that's exactly how it should be. These amazing buns are perfect for lively gatherings with friends, or simply to surprise your significant other or family. I think serving them with French fries and a couple of sauces for variety would be very appropriate. They can be served with tea or coffee.

Instructions

    Step 1

    Onion sauce. Melt butter in a skillet over medium heat. Add 2 finely chopped onions and sauté lightly. Add finely chopped garlic, sugar, wine, and vinegar, and cook until the liquid reduces and thickens.

    Filling. In a bowl, mix the ground meat, 1 finely chopped onion, 1 egg, and finely grated carrot until well combined. Divide the mixture into four portions. Slightly wet your hands and carefully shape each portion into a ball. Using your palm, gently flatten each ball into a patty. Transfer onto a plate, cover with a lid, and refrigerate for 30 minutes.

    Preheat the oven to 180°C. Heat a lightly greased baking sheet. Once the baking sheet is sufficiently hot, place the formed patties onto it and sear them on both sides until golden brown. Make sure the patties are cooked to a RARE doneness. Let the cooked patties cool down.

    Roll out the dough on a lightly floured surface. Using a wide round glass (slightly larger in diameter than the patties), cut out 8 circles. On 4 of the circles, place one cooled patty each, then top with onion sauce.

    Beat 1 egg with water and brush the edges of the remaining circles. Flip the circles over and pinch each pie closed from the inside with the brushed edges. Brush the tops of each pie with the remaining egg mixture and bake in the oven for 20 minutes until golden brown.
