Instructions
- 1
Step 1

Prepare the ingredients for making rolled piroshki.
- 2
Step 2

Crumble fresh yeast into a deep bowl, or add dry yeast. You will need one third as much dry yeast as fresh.
- 3
Step 3

Pour in warm milk, add an egg.
- 4
Step 4

Add melted butter and sour cream.
- 5
Step 5

Sprinkle in salt, sugar, and sifted flour.
- 6
Step 6

Knead an elastic, soft dough. It may stick slightly to your hands. Grease a bowl with oil and put the dough in it. Place it in a warm spot.
- 7
Step 7

In an hour, the dough will rise and increase greatly in volume.
- 8
Step 8

While the dough rises, prepare the filling for the pies. Place boiled rice and shredded boiled chicken in a bowl.
- 9
Step 9

Finely chop the onion and fry it in a frying pan with sunflower oil until lightly golden. Add to the filling.
- 10
Step 10

Salt and mix the chicken, rice, and fried onion. The filling for the pies is ready.
- 11
Step 11

Remove the dough from the bowl, knead it, and divide it into balls weighing approximately 70 grams.
- 12
Step 12

I suggest two ways to shape pastry rolls. Roll the dough ball into a circle or oval. Spread a tablespoon of filling along the edge of the dough.
- 13
Step 13

Cover the filling with dough and seal the edges.
- 14
Step 14

Fold the dough over along the sides.
- 15
Step 15

Roll up into a small roll. The pastry is ready.
- 16
Step 16

Second option, if you have a special rolling pin for making a pattern on the dough. Roll out the dough into an oval. Use the rolling pin to make the pattern. Place the filling along the edge of the dough.
- 17
Step 17

And roll the dough into a roll.
- 18
Step 18

Arrange the prepared pirozhki in a baking pan lined with parchment paper. Let the pirozhki rest at room temperature for 25–30 minutes, covering them beforehand with a towel or plastic wrap.
- 19
Step 19

Then brush the pies with egg and place them in the oven preheated to 175–180 degrees.
- 20
Step 20

I baked the pies for 35 minutes. Baking time depends on the oven.
- 21
Step 21

The rolled pirozhki are ready. Serve them at the table and enjoy this extraordinarily light and delicious pastry.
